Sweet Pickle Relish

I have become so enamored with canning that it’s all I can think about! And this relish is never far from my thoughts, it’s so easy to make and so refreshing to eat. If you like canning, you really should give it a try….

Sweet Pickle Relish

Directions:

Combine cucumbers, onions, red and yellow peppers in a large bowl; sprinkle with slat and cover with cold water. Let stand 2 hours. Drain and rinse thoroughly. Combine sugar, spices and vinegar in a large saucepot.

Bring to a boil; add drained vegetables; simmer 10 minutes.

Pack hot relish into hot jars, leaving 1/2 inch headspace.

Remove air bubbles, top with a lid and and ring; tighten.

Process 10 minutes in a boiling water bath.

Store in a cool dry place and eat within 1 year. Refrigerate after opening and eat within 1 week.
