- Preheat oven to 350F (180C) degrees. Line a rimmed baking sheet (or possibly jelly roll pan) with foil. Brush or possibly spray with vegetable oil. Stir corn syrup with vanilla and warm sauce in a large heavy-bottomed saucepan. Stir in nuts till coated. Cook, uncovered, over low heat.
- Stir occasionally. When mix comes to a boil, about 5 min, carefully pour onto baking sheet. Spread out in a single layer.
- Roast, uncovered, in centre of 350F (180C) degree oven. Stir after 10 min. Roast till caramelized, 8 to 10 min more. Cold nuts on pan 5 min, then stir in salt. Break up nuts which have stuck together. Place in a bowl. Leave at room temperature up to 2 days, or possibly chill in a sealed container several weeks. Or possibly, fill jars, bags, boxes, or possibly whatever container you wish with nuts, and decorate as you like!
- Smoky Nuts: Prepare as above, but omit vanilla and warm sauce. Add in a dash (1/8 tsp.) liquid smoke to corn syrup. Stir in 1/2 tsp. chili pwdr with salt.
