- Heat oil in a pan. Add cumin seeds and let them splutter.
- Next, add finely chopped onions, green chili, and curry leaves.
- Sauté well until the onion becomes transparent.
- Add 1 tsp of ginger-garlic paste and cook until fragrant.
- After, add the chopped vegetables you like (carrot, beans, cauliflower) and cook for 2-3 minutes.
- Add a little turmeric powder to the vegetables and mix well.
- Now pour the Tomato puree and cook for 1 minute. Add 3 cups of water (or adjust the water to bring the soup consistency).
- Reduce heat and add black pepper powder and salt to taste.
- Saute the vegetables for 8-10 minutes or until cooked thoroughly.
- Once the vegetables have cooked, turn off the flame, add some coriander leaves, and mix 1 tbsp of honey to enhance the taste of the soup.
- Serve hot with bread or papads!
