This Sweet and Spicy Chicken Stir Fry is deliciously simple and bursting with flavor.
Chicken is my best friend. I find it interesting that chefs dislike cooking with chicken breasts. Me, on the other hand, love to and I am not a chef. I am only the chef of my home.
So let’s just say that I am close enough to being a chicken expert as a home chef can really be.
One more thing. Sambal Olek. Yes, it’s heaven in a jar as far as Asian sauce is concerned.This jar of heaven is the “Rooster” brand, the same company that makes the best known Sriracha (Huy Fong Foods). It’s subtitled ground fresh chili paste. The primary ingredients are Chili, Salt, and Distilled Vinegar. It has the perfect amount of kick! A little bit has a lot of flavor. Sriracha is known as a condiment, and Sambal Olek is mainly used in cooking. I believe it adds a fantastic layer of flavor to your dish. I would say that their Chili Garlic Sauce is the closest in flavor to Sambal Olek.
I am so glad I discovered Sambal Olek. When I used it in this recipe with the right amount of sweetener it made me want to pour the sauce into a glass and drink it straight. Don’t, but it is that delicious.
On this particular day, as everyone returned home from work, one my one, they asked if they could have some. My response was, yes, but save some for Steve. By the time they finished their helping they were wishing I had doubled the recipe. I wished I had too.
I can’t wait to make this one again.

1½ Tablespoons dark soy sauce 1 Tablespoon fish sauce 1 Tablespoon rice vinegar 1 Tablespoon sambal oelek or chili garlic paste 1 teaspoon dark sesame oil 3 Tablespoons Brown Sugar or Brown Sugar Blend, such as Splenda ¾ teaspoon arrowroot 2 Tablespoons avocado oil, divided 1 pound skinless, boneless chicken breast, cut into bite-sized pieces 1 red bell pepper, sliced ½ medium red onion, cut into thin wedges 2 green onions sliced ¼ cup unsalted dry-roasted peanuts
In a medium bowl, combine soy sauce, fish sauce, rice vinegar, sambal olek, sugar, sesame oil and arrowroot.stirring well; set aside. Heat a heavy skillet over high heat. Add 1 tablespoon avocado oil to pan; swirl to coat. Add chicken; stir-fry 4 minutes or until browned and done. Remove chicken and set aside. Add remaining 1 tablespoon avocado oil to skillet; swirl to coat. Add bell pepper, and red onion; stir-fry 3 minutes or until vegetables are crisp-tender. Stir in brown sugar mixture; cook 1 minute or until thickened. Stir in chicken; toss to coat. Garnish with green onions and peanuts. 3.3.3077
