  • 1 1/2 lb Cipolline onions
  •     Or possibly medium boiling onions, peeled
  • 1 c. dry white wine
  • 1 c. water
  • 1 Tbsp. extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp freshly grnd black pepper
  • 1 sm red chile pepper, halved and seeded
  •     (optional)
  • 2 Tbsp. sugar
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. tomato paste

  1. Place onions in a single layer in a large pot. Add in equal amounts of wine and water, sufficient to cover the onions. Add in extra virgin olive oil, salt, grnd pepper, and red chile pepper, if using. Bring to a boil, cover, and boil slowly for 10 min, stirring occasionally. Remove cover and add in sugar, vinegar, and tomato paste, stirring to combine. Boil down liquid, stirring often, to glaze onions with juices, till the sauce has thickened and onions are tender, approximately 25 min. Remove chile before serving.
