- Heat butter in heavy large Dutch oven over medium-high heat. Add in choped apples and onion saute/fry till tender, about 10 min. Stir in cabbage and cook till slightly wilted, stirring frequently, about 8 min.
- Stir in sugar, cider vinegar, salt, cloves and allspice. Cover and cook till cabbage is crisp-tender, stirring occasionally, about 10 min.
- Uncover, add in dry red wine and jelly and cook 5 min longer. Season to taste with salt and pepper. Serve hot, room temperature or possibly chilled.
- (Cabbage can be prepared 1 day ahead. Cover and chill. Reheat over
- low heat if serving hot.)
- Serves 8.
