.%20Although%20I'm%20sure%20it's%20not%20always%20the%20case,%20I%20can't%20help%20but%20associate%20oatmeal%20with%20a%20thick,%20gummy%20texture%20reminiscent%20of%20mucous,%20and%20that's%20anything%20but%20appetizing.%3C/p%3E%3Cp%3EAs%20it%20turns%20out,%20there's%20a%20large%20portion%20of%20the%20oatmeal%20world%20that%20I%20didn't%20know%20existed,%20or%20at%20least%20never%20considered.%20I%20owe%20my%20epiphany%20to%20a%20restaurant%20here%20in%20Charlotte%20that%20opened%20my%20eyes%20one%20lazy%20weekend%20morning.%20I%20ordered%20what%20they%20call%20porridge,%20and%20what%20was%20presented%20to%20me%20was%20a%20bowl%20of%20steel%20cut%20oats%20and%20quinoa%20thickened%20with%20coconut%20milk%20and%20topped%20with%20a%20layer%20of%20crunchy,%20br%C3%BBl%C3%A9ed%20brown%20sugar%20and%20a%20mound%20of%20perfectly%20diced%20apples.%3C/p%3E%3Cp%3EGuess%20what:%20The%20simple%20adjustment%20of%20using%20steel-cut%20oats%20instead%20of%20instant%20oats%20automatically%20changed%20that%20bowl%20of%20semi-solid%20fiber%20into%20something%20that%20actually%20felt%20good%20in%20my%20mouth.%20The%20faint%20flavor%20of%20coconut%20helped%20immensely,%20and%20breaking%20through%20that%20barrier%20of%20brown%20sugar%20was%20fun%20and%20added%20a%20sweetness%20I%20always%20appreciate.%3C/p%3E%3Cp%3EThis%20image%20made%20possible%20by%20my%20multi-talented%20slightly%20pyromaniacal%20partner%20in%20life.%3C/p%3E%3Cp%3EI%20was%20tempted%20to%20go%20back%20to%20the%20restaurant%20the%20next%20day,%20but%20my%20better,%20more%20rational%20half%20pointed%20out%20that%20money%20still%20doesn't%20grow%20on%20trees.%20Instead,%20I%20decided%20to%20recreate%20the%20bowl%20of%20wholesomeness%20at%20home.%20After%20a%20few%20sad%20(but%20happily%20still%20edible)%20attempts,%20I%20think%20I've%20found%20a%20method%20that%20is%20accommodating%20and%20yields%20very%20satisfying%20results.%20Do%20be%20careful%20not%20to%20cook%20the%20grains%20too%20long,%20though--there's%20a%20thin%20line%20between%20tasty%20texture%20and%20mucousy%20mush.%3C/p%3E%3Cp%3EWake-and-Eat%20Oats%3C/p%3E%3Cp%3EMakes%20about%208%20servings%3C/p%3E%3Cp%3E1%20apple,%20peeled,%20cored,%20and%20finely%20diced,%20optional%20but%20enjoyable!%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20mesh%20strainer,%20rinse%20the%20quinoa%20well.%3C/p%3E%3Cp%3EIn%20a%20large%20non-stick%20pan,%20heat%20the%20coconut%20oil%20over%20medium%20heat%20until%20shimmering%20and%20add%20the%20oats,%20toasting%20until%20fragrant,%20about%202%20to%203%20minutes.%3C/p%3E%3Cp%3EPour%20the%20water%20and%20coconut%20milk%20into%20a%20Dutch%20oven%20or%20a%20large%20heavy-bottomed%20pot.%3C/p%3E%3Cp%3ETurn%20the%20heat%20to%20high%20and%20bring%20the%20liquids%20to%20a%20full%20boil,%20then%20pour%20in%20rinsed%20quinoa%20and%20toasted%20oats.%3C/p%3E%3Cp%3EStir%20and%20let%20the%20grains%20cook%20for%205%20minutes.%3C/p%3E%3Cp%3EAfter%201%20minute,%20turn%20off%20the%20heat,%20add%20the%20brown%20sugar,%20salt,%20and%20cinnamon%20and%20stir%20to%20combine.%3C/p%3E%3Cp%3ECover%20the%20pot%20and%20leave%20out%20overnight.%3C/p%3E%3Cp%3EIn%20the%20morning%20uncover%20the%20mixture%20and%20turn%20the%20heat%20on%20to%20medium.%3C/p%3E%3Cp%3EStir%20occasionally%20until%20the%20oats%20are%20heated%20through.%20There%20will%20be%20a%20bit%20of%20water%20in%20the%20mixture%20still,%20but%20the%20oats%20will%20thicken%20up%20as%20they%20sit.%3C/p%3E%3Cp%3EWhen%20finished,%20immediately%20turn%20off%20the%20heat%20and%20transfer%20to%20another%20dish%20or%20to%20breakfast%20bowls.%3C/p%3E%3Cp%3ETop%20with%20more%20brown%20sugar%20and%20br%C3%BBl%C3%A9e,%20if%20desired%20(and%20if%20you're%20high-functioning%20enough%20in%20the%20morning%20to%20operate%20a%20kitchen%20torch),%20and%20serve%20with%20the%20diced%20apples.%3C/p%3E%3Cp%3EStore%20the%20leftovers%20in%20a%20sealed%20container%20in%20the%20fridge.%20Leftover%20oats%20will%20last%20all%20week!%3C/p%3E){kind=link}
