This month my Surprise Recipe Swap partner is Katie @ Who Needs A Cape~ Katie is a busy, single mom of 3. Add into that, she is going back to school part time and she works full time. Katie is also a Runner! Where does she find the time and energy! Katie and her family live in the Great State of Texas. Katie loves to run, go to the gym, cook, and sit outside with a cup of coffee and a good book~
Katie is part of a group of women who met online several years ago. They all became fast, close friends and decided to create the blog: Who Needs A Cape~ Not Your Average Super Moms, but these ladies are your average, every day moms, just trying to get through each day with a little help from friends~
The recipe I selected is; Overnight Crockpot Apple Pie Oatmeal I decided on this recipe for one simple reason... I have never made oatmeal in my crock pot before, and I have always wanted to try it. I have been using my crock pot for over 25 years and I have never made oatmeal in it before! Crazy isn't it! I was also a single mom, working full time, and my son loved oatmeal. Oh, how I wish I had this recipe back then....my mornings would have been a little easier:) I love oatmeal, so I was really happy when I saw this recipe, I have to tell you....It Was Better than I Thought Possible!!! I keep asking myself...while I was enjoying my steaming bowl of oatmeal..."Why haven't I tried this before?"

- Overnight Crockpot Apple Pie Oatmeal~
- 1 cup steel cut oats (yes, it has to be steel cut, rolled oats will get to mushy)
- 2 cups apple juice
- 2 cups milk
- 1/2 cup water
- 1/4-1/2 cup brown sugar
- 3 apples, diced
- pinch of salt
Mix all ingredients in the crockpot the night before and cook on low for 8-9 hours. I like my oatmeal with a drizzle of French Vanilla Coffee Creamer~ Enjoy!
**I made a few adjustments to the recipe:*I added 1/2 tsp. apple pie spice** I used 2 diced apples instead of 3 and added 1/4 cup golden raisins**Instead using 1/2 cup water, I added 1/2 cup of unsweetened applesauce**I also added an extra 1/2 cup steel cut oats*
