Recipe: Homemade Refrigerator Pickles

This month my Surprise Recipe Swap partner is Melissa. Melissa is a Texan currently living in Austin with her hubby and 2 rescue dogs, King Louie and Queen Isabella. The recipe I choose to make is Homemade Refrigerator Pickles I decided on this recipe because, well, who doesn't like pickles:) Plus pickles are my hubby's favorite and with the summer grilling season here, they will disappear quickly!! These pickles were a Hit! I will more than likely be making another batch because my hubby polished off 2 jars already!! The only thing different I did to these pickles is: I used a green bell pepper instead of a red bell pepper and I sliced the jalapeno, instead of diced. Will I make these again~ You Bet!! Homemade Refrigerator Pickles

1 jalapeno, sliced (diced)

3 small mason style jars, sanitized*

*To sanitize, place a large pot of water on to boil. Once the water is boiling, set glass and lid into the pot for 10 minutes. Allow jars to cool completely before filling.

Cut cucumbers and jalapenos into very thin slices.

Dice onion and bell pepper into small pieces. Mince garlic.

Mix together cucumber, jalapeno, onion and bell pepper in medium glass bowl. Add 1 T salt. Cover with plastic wrap, allow cucumber mixture to sit for 2 hours.

In a small saucepan add vinegar, water, garlic, peppercorn and sugar. Bring to a boil. Boil for 2-3 minutes, turn off heat.

After the cucumber mixture has sat for 2 hours, drain the liquid. When the vinegar mixture is cool, pour over the cucumber mixture. Cover with plastic wrap and let sit 2 hours.

Fill the sanitized mason jars with the cucumber mixture. Top off with the juices. Seal the jars and place in the refrigerator. Leave for 2 days. Enjoy!
