- Method:CHOP pineapple flesh into cubes and liquidise to get the juice. Put juice aside and retain the pulp.
- Put pineapple pulp in a deep saucepan with 1 1/2 c. water, cloves and cinnamon stick. Bring to the boil then simmer for 20 min. Strain, throw away the pulp and spices and cold the pineapple syrup.
- Add in the cooled syrup to the pineapple juice and combine sufficient basic syrup. Refrigeratewell in the refrigerator.
- To serve, pour into individual serving glasses and top up with crushed ice and add in garnishing of your choice.
- Basic SyrupHow to prepare basic syrup:1 c. sugar1 c. water2 pandan leaves - knotted
- Method:PLACE sugar, water and pandan leaves in a deep saucepan. Bring to the boil, lower heat and simmer till sugar is dissolved. Remove pandan leaves and strain the syrup. Leave to cold for use as a basic syrup. You can store the basic syrup in a bottle in the refrigerator.
