I love all of the flavors of summer, it seems that the time is so short here in the Northwoods and we have to seize the moment with the fresh vegetables and this was one of those times. I had a few spare veggies laying around and through them all together into this dip. The base is basic–cream cheese and yogurt, but it’s what you add from there that makes it incredible…
Sun Dried Tomato Dip
- 1/2 cup dry packed sun dried tomatoes
- 8 ounces fat-free cream cheese, softened
- 3/4 cup fat-free plain yogurt
- 2/3 cup chili sauce-or more to taste
- 2 green onions, finely diced
- 1 red pepper, finely diced
- 1 yellow pepper, finely diced
- 1 clove garlic, minced
- 3/4 teaspoon celery seed
- 1/2 teaspoon paprika
DIRECTIONS:
Place tomatoes in a small bowl, cover with 1 cup of boiling water and allow to stand at room temperature for 10 to 15 minutes, then drain and chop. Meanwhile, in another bowl, combine the cream cheese, yogurt and chili sauce and mix well. Add the tomatoes and the remaining ingredients. Mix well and refrigerate at least 2 hours.
Serve with fresh sliced peppers, on crackers or with French bread slices.
