Delicious on any sandwich, and with the asparagus scramble from Cafe Flora
I use Veganaise; the original recipe calls for mayo but I'm not a purist when the taste seems the same to me. If you are, use mayo.

- In a small bowl, cover the tomatoes with 1 cup of hot water and soak for about 30 minutes until soft.
- Drain (reserving soaking water) and squeeze out excess water
- Finely chop tomatoes
- Place tomatoes in blender or food processor with remaining ingredients and process until smooth, adding soaking water as needed for proper smooth texture..
- Scrape down sides of container and process again.
- Season to taste with salt and pepper.
