This is by no means a new recipe! In fact, I think it’s really old, but it’s always a goodie…

Summer Veggie Pizza

INGREDIENTS:

• 1 prepared pizza crust- I made a Pillsbury thin crust out of a tube
• 8 ounces Vegetable Cream Cheese-softened
• 1 small cucumber-chopped
• 1 small yellow pepper-chopped
• 1 green onion-sliced
• 1 handful matchstick carrots
• 1/4 cup black olives-chopped
• 1 cup cherry tomatoes-quartered (I used sundried tomatoes)
• Smoked Paprika

DIRECTIONS:

Spread vegetable cream cheese evenly over the pizza crust. Then top with all your vegetables and sprinkle with the smoked paprika. Cut and serve.

**Absolutely any vegetables would be good on this pizza, so use what you like or have on hand!
