,%20I%20opted%20for%20something%20a%20little%20quicker.%20But%20what%20would%20it%20be?%3C/p%3E%3Cp%3EAs%20I%20was%20searching%20Ina's%20recipes%20(have%20I%20mentioned%20I'm%20a%20fan?)%20on%20Food%20Network,%20I%20found%20myself%20gravitating%20to%20sandwiches.%20Quick,%20easy,%20and%20light.%20Perfect%20for%20summer.%20Then%20I%20stumbled%20upon%20a%20recipe%20of%20hers%20that%20I%20had%20seen%20a%20long%20time%20ago,%20and%20never%20got%20around%20to%20making:%20Roasted%20Pepper%20and%20Goat%20Cheese%20Sandwiches.%20Bonus%20point:%20it%20required%20basil,%20and%20I%20just%20happened%20to%20have%20some%20leftover%20from%20another%20recipe%20that%20I%20needed%20to%20use%20before%20it%20went%20bad%20(I%20am%20notorious%20for%20having%20too%20many%20herbs%20and%20not%20enough%20uses.)%20This%20was%20the%20winner!%20And%20let%20me%20tell%20you,%20this%20sandwich%20was%20phenomenal!%20Fabulous%20flavor,%20and%20as%20easy%20as%20making%20a%20PB&J%20sandwich%20(mmmm.%20That%20sounds%20good%20too.%20But%20I%20digress.)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20500%20degrees%20F.%3C/p%3E%3Cp%3EPlace%20the%20whole%20peppers%20on%20a%20sheet%20pan%20and%20place%20in%20the%20oven%20for%2030%20to%2040%20minutes,%20until%20the%20skins%20are%20completely%20wrinkled%20and%20the%20peppers%20are%20charred,%20turning%20them%20twice%20during%20roasting.%20Remove%20the%20pan%20from%20the%20oven%20and%20immediately%20cover%20it%20tightly%20with%20aluminum%20foil.%20Set%20aside%20for%2030%20minutes,%20or%20until%20the%20peppers%20are%20cool%20enough%20to%20handle.%3C/p%3E%3Cp%3EMeanwhile,%20combine%20the%20olive%20oil,%20balsamic%20vinegar,%20garlic,%20salt,%20and%20pepper%20in%20a%20small%20bowl.%20Set%20aside.%3C/p%3E%3Cp%3ERemove%20the%20stem%20from%20each%20pepper%20and%20cut%20them%20in%20quarters.%20Remove%20the%20peels%20and%20seeds%20and%20place%20the%20peppers%20in%20a%20bowl%20along%20with%20any%20juices%20that%20have%20collected.%20Discard%20the%20stems,%20peels,%20and%20seeds.%20Pour%20the%20oil%20and%20vinegar%20mixture%20over%20the%20peppers.%20Stir%20in%20the%20capers.%20Cover%20with%20plastic%20wrap%20and%20refrigerate%20for%20a%20few%20hours%20to%20allow%20the%20flavors%20to%20blend.%3C/p%3E%3Cp%3ETo%20assemble%20the%20sandwiches,%20spread%20the%20bottom%20half%20of%20the%20loaf%20with%20the%20goat%20cheese.%20Add%20a%20layer%20of%20peppers%20and%20then%20a%20layer%20of%20basil%20leaves.%20Separate%20the%20onions%20into%20rings%20and%20spread%20out%20on%20top.%20Sprinkle%20with%20salt%20and%20pepper.%20Cover%20with%20the%20top%20half%20of%20the%20ciabatta%20and%20cut%20into%20individual%20servings.%3C/p%3E%3Cp%3EMy%20recipe%20notes:%3C/p%3E%3Cp%3ESince%20I%20was%20running%20behind%20(hey,%20cut%20me%20some%20slack,%20it's%20summer)%20I%20used%20a%20jar%20of%20roasted%20peppers%20to%20save%20time%20instead%20of%20roasting%20my%20own.%20An%20already%20easy%20sandwich%20was%20made%20even%20easier!%3C/p%3E%3Cp%3EI%20toasted%20the%20ciabatta%20bread%20for%20a%20nice%20crunch.%3C/p%3E%3Cp%3EMy%20store%20doesn't%20carry%20the%20Montrachet%20brand,%20but%20I%20did%20find%20a%20log%20of%20herb%20goat%20cheese,%20and%20I%20really%20could%20tell%20that%20the%20herbs%20in%20the%20cheese%20add%20a%20lot%20to%20the%20flavor-I%20really%20don't%20see%20plain%20goat%20cheese%20working%20anywhere%20near%20as%20well-but%20that's%20just%20me.%3C/p%3E%3Cp%3EI%20can't%20believe%20how%20deceptively%20wonderful%20this%20meal%20was.%20How%20can%20something%20so%20easy%20be%20so%20great?%20I%20guess%20that's%20what%20Ina's%20famous%20for%20though.%20We%20added%20some%20simple%20Parmesan%20roasted%20green%20beans%20to%20the%20meal,%20and%20we%20had%20a%20quick,%20light%20summer%20meal.%20The%20fact%20that%20this%20sandwich%20doesn't%20have%20meat%20really%20makes%20it%20a%20nice%20choice%20on%20a%20hotter%20day.%20A%20chilled%20glass%20of%20Chardonnay%20was%20an%20extra%20treat.%20The%20flavors%20in%20this%20sandwich%20really%20remind%20me%20of%20Ina's%20Grilled%20Panzanella%20Salad-one%20of%20my%20favorite%20flavor%20combos%20of%20all%20time.%20My%20husband%20has%20already%20declared%20that%20this%20should%20become%20a%20staple%20in%20our%20home.%20I%20guess%20he%20twisted%20my%20arm.%3C/p%3E%3Cp%3E*Eye%20Candy%20Alert!*%3C/p%3E%3Cp%3EUpdate:%20Here%20is%20the%20short%20version%20of%20the%20Parmesan%20Green%20Beans%20recipe%20we%20use:%3C/p%3E%3Cp%3EWe%20use%20Tyler%20Florence's%20recipe,%20but%20you%20don't%20really%20need%20any%20quantities.%20And%20I%20love%20that%20you%20could%20adapt%20this%20for%20any%20vegetable%20you%20want.%3C/p%3E%3Cp%3E1.Preheat%20oven%20to%20400%3C/p%3E%3Cp%3E2.Place%20the%20green%20beans%20(or%20whatever%20vegetable%20you%20choose%20on%20a%20baking%20sheet)%3C/p%3E%3Cp%3E3.%20Drizzle%20with%20olive%20oil,%20salt%20(not%20a%20ton-the%20Parmesan%20is%20salty)%20and%20pepper.%3C/p%3E%3Cp%3E4.%20Grate%20fresh%20Parmesan%20on%20top%20(a%20generous%20amount%20so
