- Halve squash lengthwise; scrape out seeds. Place squash, cut-side down, in lightly-greased baking dish. Bake in 350 degree oven 45 min.
- While squash is baking, in small saucepan, saute/fry onion in butter till transparent. Blend in flour, salt, and pepper till smooth. Fold in lowfat milk; cook over medium heat, stirring till mix thickens and boils. Remove from heat; stir in Spam and peas.
- Spoon mix into squash halves. Cover and return to oven for 5 - 10 min till Spam is piping warm.
- Microwave directions: Pierce squash; microwave 10 min till tender. Halve and remove seeds.
- In 2-c. measure, combine butter with onion; microwave 1 minute. Blend in flour; fold in lowfat milk, salt, and pepper till smooth. Microwave 1 minute; mix well till smooth. Combine Spam, peas, and sauce; pile into squash halves. Microwave 3 min. Cover and let stand 3 min.
- This recipe yields 4 servings.
