.%20Well,%20one%20recipe%20that%20I%20didn't%20share%20was%20for%20a%20little%20invention%20of%20mine%20that%20I%20had%20entered%20into%20the%20Gold%20Medal%C2%AE%20Flour%20Recipe%20Contest.%20Guess%20what?%20My%20recipe%20was%20a%20runner%20up!%20Now%20I%20get%20to%20share:%3C/p%3E%3Cp%3EStrawberry-Rhubarb%20Cupcakes%3C/p%3E%3Cp%3E1.%20In%201-quart%20saucepan%20over%20medium%20heat,%20cook%20strawberries,%20rhubarb,%201/3%20cup%20granulated%20sugar,%201%20tablespoon%20flour%20and%201%20tablespoon%20butter,%20stirring%20frequently,%20until%20mixture%20comes%20to%20a%20boil.%20Reduce%20heat;%20simmer%2010%20minutes.%20Remove%20from%20heat;%20transfer%20to%20small%20bowl.%20Cover%20and%20refrigerate%20about%201%20hour%20or%20until%20chilled.%3C/p%3E%3Cp%3E2.%20Heat%20oven%20to%20350%C2%B0F.%20Place%20paper%20baking%20cup%20in%20each%20of%2012%20regular-size%20muffin%20cups.%20In%20small%20bowl,%20stir%20together%201%201/2%20cups%20flour,%20the%20baking%20powder%20and%20salt;%20set%20aside.%20Reserve%202%20tablespoons%20strawberry%20mixture%20for%20frosting.%20In%20another%20small%20bowl,%20stir%20together%20remaining%20strawberry%20mixture,%201/3%20cup%20milk%20and%20the%20vanilla.%3C/p%3E%3Cp%3E3.%20In%20large%20bowl,%20beat%201/2%20cup%20softened%20butter%20and%201/2%20cup%20granulated%20sugar%20with%20electric%20mixer%20on%20medium%20speed%20about%203%20minutes%20or%20until%20light%20and%20fluffy.%20Add%20egg;%20beat%20until%20blended.%20Add%20half%20the%20flour%20mixture%20then%20half%20of%20the%20strawberry%20mixture,%20beating%20well%20after%20each%20addition.%20Repeat%20with%20remaining%20flour%20and%20strawberry%20mixtures.%20(Batter%20will%20be%20thick.)%20Divide%20batter%20evenly%20among%20muffin%20cups.%3C/p%3E%3Cp%3EI%20added%20a%20little%20bit%20of%20red%20food%20coloring...something%20about%20cooking%20strawberries%20and%20rhubarb%20makes%20the%20color%20a%20little%20dull.%3C/p%3E%3Cp%3E4.%20Bake%2020%20to%2025%20minutes%20or%20until%20toothpick%20inserted%20in%20center%20comes%20out%20clean.%20Cool%2010%20minutes;%20remove%20from%20pan%20to%20cooling%20rack.%20Cool%20completely,%20about%2030%20minutes.%3C/p%3E%3Cp%3E5.%20In%20medium%20bowl,%20beat%20cream%20cheese,%201%20tablespoon%20softened%20butter%20and%20the%20reserved%202%20tablespoons%20strawberry%20mixture%20with%20electric%20mixer%20on%20low%20speed%20until%20smooth.%20Beat%20in%20powdered%20sugar%20and%20enough%20milk%20until%20frosting%20is%20of%20desired%20spreading%20consistency.%20Spread%20frosting%20on%20cooled%20cupcakes.%3C/p%3E%3Cp%3EThe%20last%20time%20I%20made%20the%20frosting,%20it%20didn't%20need%20the%20extra%20milk.%20I%20added%20a%20little%20red%20food%20coloring%20to%20this,%20as%20well.%3C/p%3E%3Cp%3EPink%20cupcakes%20are%20the%20cutest!%3C/p%3E){kind=link}
