I have spent the entire day moving my parents out of their old house and into their new one. The house that they built themselves 30 years ago will now be solely dedicated to being a winery and my parents will now actually be able to leave work and go home. I’m happy for them, but I would be lying if I said that it wasn’t a little sad. At least the house will still be in the family, there will just be hundreds of people a week moving through it now.

On the up side, today was a perfect day for being productive. It was in the mid- 70′s all day with a light breeze and plenty of sunshine. What I fear may be the last Spring day we see. The temperatures are supposed to skyrocket this week, topping out at 97 degrees by this weekend. 97! Crazy…

It’s weather like that that makes me long for a vacation. If only we could be French and just take an entire month off to vacation. Instead we only get a week at a time and in a couple of weeks we will be headed for our annual trip to Hot Springs, AK with my in-laws. Ahhh…vacation. Where every day will start and end with a cocktail. I’m excited. And since the kids are really into fruity stuff (i.e. popsicles and smoothies) my cocktail mixers can do double duty. This refreshing drink is perfect for a hot day and should you have a little leftover at the end of it all, feel free to pour the rest into some popsicle molds to enjoy later.

Strawberry Peach Limeade

Instructions

In a small saucepan, bring the water, sugar and mint to a boil and cook until the sugar has dissolved. Remove from heat and let cool. Meanwhile, puree the strawberries, 2 T lime juice, and peaches in a food processor until smooth. Strain the puree through a fine mesh strainer to remove the seeds and pulp. This should leave about 1 cup of strawberry peach juice. In a large glass pitcher, combine strawberry juice, lime juice, and the simple syrup ( remove the mint sprig) and stir to combine. Fill 4 glasses with ice. Fill each glass ¾ full with strawberry peach mixture and top with a splash of club soda or ginger ale. Garnish with lime slices and fruit. Serve and enjoy!2.0
