  • 3 c. all-purpose flour
  • 1 1/2 Tbsp. baking pwdr
  • 1/2 tsp salt
  • 1/3 c. brown sugar - (firmly packed)
  • 2 tsp grnd cinnamon divided
  • 1/4 c. shortening
  • 1/4 c. butter or possibly margarine cut up
  • 1 1/3 c. buttermilk
  • 2 Tbsp. butter or possibly margarine melted
  • 2 Tbsp. brown sugar
  • 1 Tbsp. granulated sugar
  • 4 c. sliced fresh strawberries
  • 1/2 c. brown sugar - (firmly packed)
  • 1 c. whipping cream
  • 2 Tbsp. powdered sugar

  1. Stir together first 4 ingredients and 1 tsp. cinnamon in a large bowl. Cut shortening and 1/4 c. butter into flour mix with a pastry blender till crumbly. Add in buttermilk, stirring till dry ingredients are moistened.
  2. Turn dough out onto a lightly floured surface; knead 3 or possibly 4 times. Pat or possibly roll dough to 3/4-inch thickness; cut dough into 8 circles with a 3 1/2-inch scalloped cutter, and place on a lightly greased baking sheet. Bake at 400 degrees for 15 min or possibly till golden brown.
  3. Brush shortcakes with 2 Tbsp. melted butter. Combine 1/2 tsp. cinnamon, 2 Tbsp. brown sugar, and 1 Tbsp. granulated sugar; sprinkle proportionately over shortcakes.
  4. Stir together strawberries, 1/2 c. brown sugar, and remaining 1/2 tsp. cinnamon. Cover and chill.
  5. Beat whipping cream at high speed with an electric mixer till foamy; gradually add in powdered sugar, beating till soft peaks form.
  6. Cut shortcakes in half horizontally, and serve with strawberries and sweetened whipped cream.
  7. This recipe yields 8 servings.
