I'm not sure I'd make it with the coconut milk again, it was a little sweet for my taste, but overall a good substitute to regular fried rice.

- Bring the coconut milk, chicken broth and quinoa to a boil. Reduce to simmer and cook about 15 minutes until done.
- In a wok or large skillet, heat some olive oil and add the green onion, garlic and ginger. Cook about a minute until aromatic.
- Make a hole and scramble the eggs in the center.
- Mix everything together and add the cooked quinoa.
- Cook until the quinoa is slightly crispy.
- Stir in pineapple and peas.
- Garnish with cilantro, peanuts and soy sauce.
