As summer stretches on, I get this natural instinct to want to step away from the stove.
I don't do well surviving on take-out (it causes my stomach to do strange things) so I try to find recipes that can be made quickly on the grill.
What’s an easy main meat dish you can prepare on the grill?
Well I have two for you! Grilled Teriyaki Pork Chops and Lemon-Honey Grilled Chicken.
What I like about the marinades for both these recipes is they are dead simple to make AND they penetrate the meat quickly so you don’t have to wait hours for them to add flavor.
Grilling these thick boneless pork chops five minutes per side over medium-high heat worked perfect! It gave them great looking color on the outside and inside they were extremely tender and juicy!
I served mine with cooked Jasmine rice and sweet corn! Delish!

Turn this into a quick summer meal by cooking rice while the pork marinates and cooking corn while the pork is on the grill.
Time it takes: 5 minutes to prepare, 20 minutes to marinate, 8 to 10 minutes to grill
- Makes: 4 grilled pork chops
- ¼ cup jarred teriyaki sauce
- 1 tbsp ketchup
- 1 tbsp soy sauce
- 1 tbsp freshly squeezed lime juice
- 1 tbsp freshly grated ginger or 1 tsp ground ginger
- 1 tsp sesame oil
- 1 large clove garlic, minced
- 4 boneless pork loin chops (about 8oz each)
In a shallow dish, whisk together teriyaki sauce, ketchup, soy sauce, lime juice, ginger, oil and garlic. Add pork to marinade, turn to coat. Let stand for 20 minutes.
Grill pork on barbecue over medium-high heat until just cooked through, about 5 minutes per side. Remove pork from grill, cover with foil and let stand for 5 minutes.
