Steamed Artichokes
Hubby and I are finding ourselves home more and more often as the boys are off and busy working or with girlfriends. There are many downsides to these life changes however, there are many upsides as well. One of those upsides is that we can make whatever we want for dinner and not worry about who is not going to eat it and what I am going to make for a second meal. One thing that we really love is artichokes! So the other night I just made artichokes, nothing else, and we were in heaven! Steamed Artichokes
Ingredients:
- 4 artichokes
- 1/2 lemon-sliced
- 2 whole garlic cloves
- 1 stick of butter
- 3 garlic cloves-minced
- 1/8 teaspon garlic powder
- 2 tablespoons Parmesan cheese-grated
Directions:
In a large stockpot, bring about 8 cups of water to a boil, add in the lemon and the whole garlic cloves. Meanwhile, trim off the edges of each leave at the tip, remove the bottom leaves and cut the stem to about 1 inch. Place the artichokes in the pot, cover and cook for about 35-45 minutes, or until the leaves are tender.
In a small saucepan, melt the butter over medium heat, then skim off the top solids (this will make a clarified butter), add in the garlic and let brown a little. Remove from the heat and add in the garlic powder. Just before serving, pour the garlic butter into individual portion bowls and top with 1 tablespoon each of Parmesan cheese.
To eat: Remove the artichokes from the water and let sit a few minutes-they will be extremely hot! Carefully pull off the leaves and dip the flat end into the butter, scraping off the meaty part with your bottom teeth. The pay-off for all this hard work is finally getting to the middle and the "heart" which is the best part!!
