TGIF! It’s Friday. Again! And by now you know what that means. Today our featured Cocktail O’Clock recipe was created by my gorgeous friend from Celiac and the Beast, Erica Dermer. I met Erica just a few months ago at the Gluten & Allergen Free Expo in San Fransicso. She is definitely one of the cool kids of the gluten-free world. Cool, but also funny, silly, open, and utterly honest–especially when it comes to her health struggles.

Like me, she suffers from Celiac Disease. She has become a huge voice and advocate, helping to raise awareness of the needs of celiacs and others with gluten sensitivities. Unlike me, girl takes a damn good “selfie.” See for yourself on her instagram account. Not only that, but her boyfriend Matt has designed several totally awesome t-shirts that they sell at expos (and on the website). They are comfy. They are cool. And best of all every time we wear them people ask what they are all about.

Erica and I bonded over a mutual love for St. Germain, which the hotel bar happily had on hand. She likes her St. Germain with ginger ale. And I like mine with ginger ale too! Her refreshing drink, loaded with fresh strawberries, is sure to be a hit with us this summer.

This cocktail is perfect for hot Arizona summers, and it’s made with my favorite liquor – St-Germain! St-Germain is made from handpicked elderflower blossoms and has such a unique floral sweet taste that just reminds me of enjoying that special time outdoors before it gets too hot to function outside in Arizona. I’m also digging muddled strawberries in drinks, so I wanted to add something to the liquor that makes it even more refreshing!

It’s bound to get the sides of your glasses full of strawberry parts, but using a straw to drink it doesn’t work because you’ll be stuck trying to slurp up a giant wad of strawberries! The best way to drink it is to not care what it looks like and to just enjoy the drink!

St. Strawberry Smash

This light and refreshing cocktail will cool you down on those warm summer evenings. The sweet, floral notes of the St. Germain are the perfect compliment to fresh, ripe strawberries. Don't bother using a straw. The drink is chunky...and supposed to be.

Ingredients

A handful of ice

Instructions

Mix the ginger ale and St. Germain together in a glass.

Using a muddler (or a wooden spoon), smash the strawberries until they release their juice and become pulpy.

Stir the strawberries to the ginger ale/St. Germain mixture and add ice.

Serve immediately.
