Another holiday cupcake

Love St. Paddy’s Day and I wanted to celebrate with (what else?)—cupcakes!
I used the same base recipe as with the Mardi Gras Cupcakes, but added all lime for the citrus. (And, after sampling a few, I would add even more lime zest.)
St. Patrick’s Day Lime Cupcake
1 box white cake mix
- 1/2 c. lite sour cream
- 3 eggs
- 1/3 c. canola oil
- 1 cup 2% milk
- Zest of 3 limes, chopped
- Mix all ingredients in a stand mixer until incorporated. Using an ice cream scoop, portion out the batter into cupcake liners. Bake at 350 degrees for 20 minutes. Makes about 20 cupcakes. Frost with citrus cream cheese frosting.
- Citrus Cream Cheese Frosting
- 2 pkgs. Neufchatel (1/3 less fat cream cheese), softened
- 1 stick butter, softened
- 1 t. vanilla
- zest of one lime
- juice of 1/2 lime
- about 2 lbs. of powdered sugar
- food coloring for tinting
Cream cream cheese and butter. Add vanilla, lime zest and juice. Carefully mix in powdered sugar, a little at a time until you achieve the right consistency. Add food coloring (optional).
I also added some green sparkling sugar in with the food coloring.
