Squid Tamales With Roasted Corn Salsa

Ингредиенты

  • 1 x onion roughly minced
  • 1 x red bell pepper roughly minced
  • 1 x green bell pepper roughly minced
  • 4 x garlic cloves
  • 1/4 c. extra virgin olive oil
  • 2 Tbsp. tomato paste
  • 6 c. fresh corn kernels
  • 1/2 c. cornstarch
  • 1/2 c. fine yellow cornmeal
  • 2 Tbsp. squid ink
  • 1 Tbsp. sugar
  • 1 lb fresh squid cleaned, and
  •     minced finely
  • 15 x individual cornhusks
  • 4 x ears corn
  • 2 x red bell peppers finely diced
  • 1/2 c. minced scallion
  • 1/2 c. extra-virgin extra virgin olive oil
  • 1/4 x minced cilantro
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

  1. In a deep saute/fry pan, saute/fry the onion, bell peppers, and garlic in the extra virgin olive oil for 10 min till the vegetables are soft then add in the tomato paste, stir well and, remove and set aside.
  2. Place corn kernels in a large mixing bowl add in the sauteed vegetables, cornstarch, cornmeal, and squid ink, and mix well. Place small batches of the corn mix into a food processor and puree till smooth.
  3. Return the puree mix to the bowl, add in sugar, and mix in grnd squid. Lay 2 cornhusks end to end, place 1/2 c. of the mix in the middle of the cornhusk. Roll up the husks and secure them with twine.
  4. Steam the tamales in a double boiler with a steamer insert for 45 min. Remove and serve with a spoonful of the roasted corn salsa.
  5. Roasted Corn Salsa: Remove the husks from the ears of corn and place them on warm grill for about 10 min till all the sides of the corn have charred nicely. Remove them and allow to cold.
  6. With a knife, remove the kernels from the cob. In bowl, combine the corn with the remaining ingredients, and mix well. Season with salt and pepper.
  7. This recipe yields 8 servings.
