Sisig is one of the popular pub food in the Philippines usually made with pork innards served on a sizzling hot plate and dressed with pork brains it is not for everyone especially to those ones who does not love eating offal. It may sound like a food from a horror movie but Filipinos do love it but how about the ones who did not grow up with this dish? Well as long as you don’t tell what it consists of they will surely love them, I tried to do that with some of my non Filipino friends and they love the dish and later on freaked out when I told them what is in it. For those who already knew what Sisig is and don’t eat offal then this recipe today is the one for you, the squid sisig. Squid sisig may look similar to the normal sisig but this dish is not made of pork innards but finely chopped squid quickly cooked on a hot plate then dressed with mayonnaise and some lemon, it is as delicious but definitely a healthier alternative though this is easier to prepare making this is tricky as overcooking it will yield a tough squid.So what does this dish go well with? Like the original dish it goes well with beer specially when made really hot and spicy, you can also pair it with rice and eat is like a viand, or even enjoy it as an appetizer or as a side dish.Squid Sisig Save PrintPrep time Cook time Total time Serves: 4Ingredients2 large squids, cleaned2 tbsp soy sauce2 onions, minced6 cloves garlic, minced1 thumb sized ginger, minced1-2 pcs birds eye chillies, finely chopped⅓ cup mayonnaiselemon wedges, to servefreshly ground black peppersaltoilInstructionsPrepare a grill and once its hot grill squid quickly on each side just until firm, it might take 2 minutes or less on each side. Let it cool then chop the squid into small pieces.In a large bowl combine soy sauce, garlic, ginger, birds eye chillies, freshly ground black pepper and 3 tbsp of oil. Add the chopped squid and mix to combine.Heat up a heavy bottomed pan, once it’s very hot and smoking drop the squid quickly and cook for a minute or two while stirring, do not overcook.
