Spinach with Shallots and Bacon
- 3 slices center cut bacon, cut into small pieces
- 1 shallot, chopped
- 1 Tablespoon lemon juice
- ⅛ cup water
- Pepper to taste
- 1 teaspoon fresh thyme
- 1 lb baby spinach leafs
Fry the bacon in a frying pan over medium heat, stirring, until it begins to brown, 2 to 4 minutes.
Using a slotted spoon, transfer to a plate lined with paper towels.
Add shallots, spinach leafs and thyme to the pan drippings and cook, stirring, until the shallots begin to brown, 3 to 4 minutes.
Add the water and lemon juice and cook, stirring, until wilted, about 2 minutes. Remove from the heat; stir in the bacon and season with pepper

I tell the hubby bacon goes with everything, and this time, it’s in our spinach. That man could not get to the dinner table fast enough.
I served this delectable side dish with a roasted tri tip, that, in my mind, was the best one I had made to date.
