This is based on a photo I saw on Google+ a few weeks ago. It was in Italian, but I was able to figure out the ingredients…. sort of. I had to try it, though – it looked so good. My apologies to the Italian food blogger that posted it – if you recognize your recipe, please let me know so I can give credit where it’s do. Oh… Yours was much prettier. Use a skillet large enough to make a very thin ‘pancake’. Next time I need to chop the spinach into smaller pieces so it’s easier to slice the roll. Spinach Ricotta Rolls Ingredients: 2 eggs 1 tsp water 1 tsp Herbes de Provence 5oz (150gr) frozen spinach, thawed, squeezed dry and chopped 3oz (90gr) ricotta 1/3 cup green olives, chopped 2 slices dry-cured ham, such as Prosciutto, tore into pieces 3 tsp olive oil Instructions: Heat spinach in a large skillet, just until warm and any remaining water has evaporated. Add ricotta and stir over heat until combined. Add green olives and combine. Using a large skillet, fry ham in 1 tsp olive oil until very crisp. Remove and set aside. Whisk eggs, Herbes and water well. Heat remaining 2 tsp oil in the same skillet. Add eggs, swirling to coat the bottom of the skillet evenly. Cook until done, covering if necessary to get the top done. Put the egg ‘pancake’ on a large board or baking sheet. Spread the spinach evenly over the pancake. Roll up like a jelly roll and slice. Serve slices garnished with crisp ham. Print Recipe It’s been raining. And raining and raining and raining. The lawn is mud, the field is mud, the driveway is mud, the mud is mud. The dogs insist on going for their walks but they hate being out in the rain but they have to go on the entire walk but they run the last bit to get into the barn and out of the rain. When they come in, they’re soaking wet with mud up their legs and covering their bellies. They’re wet enough that there are muddy drips falling off them as they walk into the kitchen. Two hours later they’re partially dry and somewhat clean (the floors, however, are filthy) They decide they need to go outside. They race out the door, play frantically, do whatever else they need to do and race back to the house. After 5 minutes of being outside they are, once again, soaking wet and covered in mud. And they’re bored….. It’s raining, they don’t want to be outside, they can’t play, they have nothing to do. I’ve tried sending them to their room and telling them to read a good book but they won’t listen. I hate winter. Tomorrow, if it’s still raining (likely) we’ll do doggie calisthenics in the barn: Sit! Down! Sit! Down! Sit! Down! Also known as doggie push-ups.
