Seasonal Weekly Menus for Summer: July, is finished!

Volume II is four weeks worth of menus and recipes for the month of July and a shopping list for each week.

Make good use of all the wonderful vegetables available at the height of summer without having to do all the planning. Summer should be easy.

Speaking of easy – my second attempt at summer rolls was much easier.

This time I didn’t leave them in the water until they were soft but just gave them a quick dip. Once they’re wet they continue to soften,

Spinach, Mozzarella, Tomato Summer Rolls

Total time: 15 minutes

Ingredients:

Pesto Dipping Sauce:

2 tbs Pesto Rosso

4 tbs Greek yogurt

Instructions:

Have all of the vegetables sliced and ready.

Put water on a dinner plate or pie plate deep enough to cover a sheet of rice paper.

Put 1 sheet of rice paper in the water. Soak it until it is almost pliable – there should be instructions on the package.Pay close attention to it. When it just starts to become pliable, remove from water and drain well.

Place on another plate, lay out 2 – 3 spinach leaves and 2 – 3 basil leaves

Put the tomato slices in a row and add strips of mozzarella

Roll up, tucking in the sides as you roll

Repeat with the rest of the ingredients.

Mix Pesto Rosso and Yogurt.

To serve: put two rolls on each plate, cut in half or thirds.

Add a dollop of sauce and serve.

Schools out for summer!

On the last day of school, after we go over our homework and finish our lesson, we get to play Scrabble.

In French of course.

The biggest difference in the way we play (in school, in French) is that the dictionary is not used to challenge words but to find words. When the Scrabble board comes out everyone jumps up to find the biggest dictionary they can. Then we frantically flip through the pages looking for words to fit.

Another difference is the value of the letters: W is worth 10 points, rather than 4 and Q is worth 4 rather than 10.

There are a lot of words that use Q…. very few that use W.

Last night we had the official end of the year party: L’Auberge Espagnole

L’Auberge Espagnole is a French potluck. The term is partly idiomatic with origins lost in time and partly from a 2002 French / Spanish movie of the same name.

The translation is ‘Spanish Inn.’

Since I speak a bit of Spanish, you can well imagine there was just the tiniest bit of confusion when I was told we were having an Aberge Espagnole.

The French and expats do know how to have a potluck…. The spread was fantastic.

And they all (or at least those who had the chance) loved my Absolute Best Brownies.
