%20but%20not%20too%20much,%20but%20the%20flavour%20of%20the%20cheddar%20was%20rich%20and%20tangy%20with%20an%20aftertaste%20that%20just%20makes%20you%20want%20to%20eat%20more!%20%20Beautiful%20stuff!%3C/p%3E%3Cp%3EThe%20Barber%20family%20have%20been%20farming%20and%20making%20cheese%20at%20Maryland%3C/p%3E%3Cp%3EFarm%20in%20Ditcheat,%20Somerset%20since%201833.%20In%20the%20early%20days,%20milk%20from%20the%3C/p%3E%3Cp%3Efarm%20was%20sold%20locally%20and%20the%20cheese%20made%20was%20used%20to%20feed%20the%20family%3C/p%3E%3Cp%3Eand%20farm%20workers.%20As%20time%20went%20on,%20the%20milk%20needed%20to%20make%20cheese%3C/p%3E%3Cp%3Eincreased%20and%20soon%20the%20family%20were%20buying%20milk%20from%20neighbouring%20farms%3C/p%3E%3Cp%3Eas%20well.%3C/p%3E%3Cp%3EToday%20the%20Barber%20farms%20comprise%202500%20acres%20of%20prime%20Somerset%20dairy%3C/p%3E%3Cp%3Eland%20and%20are%20home%20to%20some%202,000%20dairy%20cows.%20They%20continue%20to%20use%3C/p%3E%3Cp%3Etraditional%20%E2%80%98cheddaring%E2%80%99%20techniques%20combined%20with%20a%20unique%20collection%20of%3C/p%3E%3Cp%3Etraditional%20starter%20cultures%20for%20which%20they%20are%20sole%20guardians,%20to%20create%3C/p%3E%3Cp%3Ea%20truly%20typical%20West%20Country%20Farmhouse%20cheddar.%3C/p%3E%3Cp%3EThe%20Spinach%20and%20Cheese%20Souffle%20was%20the%20ideal%20vehicle%20for%20this%20strong%20cheddar,%20only%20100g%20is%20used%20but%20the%20souffle%20still%20tasted%20strongly%20of%20tangy%20cheddar.%20%20I%20also%20used%20some%20in%20a%20cheese%20sauce%20for%20cauliflower%20cheese%20and,%20again,%20a%20little%20went%20a%20long%20way.%20%20I%20can%20highly%20recommend%20this%20cheese%20and%20will%20be%20looking%20out%20for%20it%20again.%3C/p%3E%3Cp%3ESpinach%20and%20Cheese%20Souffl%C3%A9%3C/p%3E%3Cp%3EServes%206-8%20depending%20on%20the%20size%20of%20the%20ramekins%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3E1.%20Heat%20the%20oven%20to%20200C/Gas%206.%20Pierce%20the%20bag%20of%20spinach%20in%20several%20places%20and%20microwave%20on%20full%20power%20for%201%201/2%20-%202%20minutes%20until%20wilted.%20Leave%20until%20cook%20enough%20to%20handle%20then%20squeeze%20out%20as%20much%20liquid%20as%20possible.%20Chop%20roughly.%3C/p%3E%3Cp%3E2.%20Melt%20the%20butter%20in%20a%20pan%20and%20stir%20in%20the%20flour.%20Cook%20stirring%20for%202%20minutes.%20Gradually%20whisk%20in%20the%20milk%20until%20smooth%20then%20cook%20gently,%20stirring%20for%205%20minutes.%20Transfer%20to%20a%20large%20bowl%20and%20set%20aside%20to%20cool%20slightly.%3C/p%3E%3Cp%3E3.%20Brush%206-8%20ramekins%20or%20small%20ovenproof%20dishes%20with%20melted%20butter%20and%20coat%20with%20breadcrumbs.%3C/p%3E%3Cp%3E4.%20Stir%20most%20of%20the%20cheese%20and%20the%20mustard%20into%20the%20sauce%20and%20season%20with%20nutmeg,%20salt%20and%20pepper.%20Gradually%20stir%20in%20the%20egg%20yolks,%20then%20add%20the%20spinach.%3C/p%3E%3Cp%3E5.%20In%20a%20large%20bowl,%20whisk%20the%20egg%20whites%20until%20forming%20soft%20peaks.%20Take%20care%20not%20to%20allow%20them%20to%20become%20dry.%20Spoon%20two%20tablespoons%20of%20egg%20white%20into%20the%20cheese%20mixture%20to%20slacken%20the%20mixture%20then%20fold%20in%20the%20rest%20of%20the%20egg%20white%20with%20a%20metal%20spoon.%3C/p%3E%3Cp%3E6.%20Place%20the%20ramekins%20in%20a%20roasting%20tin%20and%20pour%20in%20boiling%20water%20to%20come%20half%20way%20up%20the%20sides%20of%20the%20dishes.%20Bake%20for%2010-12%20minutes%20until%20well%20risen%20and%20golden%20brown,%20but%20still%20with%20a%20little%20bit%20of%20a%20wobble!%3C/p%3E%3Cp%3EServe%20immediately%20with%20green%20salad.%3C/p%3E%3Cp%3EI%20made%20some%20small%20changes%20to%20the%20recipe,%20I%20baked%20mine%20in%20a%20single%20dish%20as%20I've%20put%20my%20ramekins%20into%20storage%20due%20to%20the%20work%20which%20is%20about%20to%20start%20on%20my%20kitchen.%20%20The%20recipe%20also%20stated%20that%20you%20only%20use%202%20tbsp%20of%20the%20egg%20white,%20I'm%20not%20sure%20if%20this%20is%20an%20error%20in%20the%20booklet,%20but%20I%20used%20all%20the%20egg%20whites%20and%20the%20souffle%20seemed%20the%20correct%20texture%20to%20me.%20I%20can't%20see%202%20tbsp%20raising%20this%20amount%20of%20bechamel%20sauce.%3C/p%3E%3Cp%3ESpinach%20and%20Cheese%20Souffle%3C/p%3E%3Cp%3EThe%20Souffle%20was%20light%20and%20fluffy,%20with%20the%20fresh%20sharp%20taste%20of%20the%20spinach%20contrasting%20nicely%20with%20the%20richness%20of%20the%20cheese%20and%20eggs.%20%20A%20lovely%20dish,%20I%20do%20love%20a%20souffle,%20but%20not%20how%20much%20washing%20up%20it%20creates!%3C/p%3E){kind=link}
