Grilled steak is served on a bed of greens and tossed in a flavorful marinade in this Spicy Thai Steak Salad.

Wow, the entire month of January just flew by. Seems as though these days are packed with so much to do and so little time. I keep watching the sunrise/sunset times change each passing day. Yearning for a longer day. January 1st the sun set at 4:59 p.m. in my neck of the woods. On February 1st the sun sets at 5:17 p.m. I want the days to be longer and the sin to shine upon my face. I want the smell of the grill wafting through the air.

Perhaps if we settle for a spicy Thai steak salad we can at least envision the long days of summer.

I really am not complaining. I love cuddling up in a warm blanket. I just don’t like getting out from under the blankets when it’s 34 degrees outside.

It’s times like these that I wish I were a bear and then I can hibernate all winter long.

MARINADE: 3 tablespoons avocado oil 1 lime, juiced ¼ cup chopped fresh cilantro 1 tablespoon red wine vinegar 1 Tablespoon freshly grated ginger 2 Tablespoons date sugar (sub brown sugar) 1 Tablespoon brown sugar 2 Tablespoons fish sauce 2 Tablespoons Black Bean Garlic sauce 1 teaspoon ground coriander 2 cloves of garlic, minced 2 Tablespoons Mirin 16 ounces boneless blade steak SALAD (assemble just before grilling the steak) 1 red pepper, chopped 1 cucumber, halved and thinly sliced 1 cup of shredded carrots 4 cups of cole slaw

Combine all of the marinade ingredients in a large bowl and whisk to combine. Remove half of the marinade to a small bowl and reserve for dressing your salad. Pour the remaining marinade into a large sealable plastic bag and add your steak. Seal tightly and toss to coat. Marinate in the refrigerator for up to 12 hours. Remove the steak and throw away the bag with the marinade. Preheat your grill. Grill the steak to medium rare and allow to rest 5 minutes on a board. Slice thinly across the grain.
