%20food%20in%20the%20school%20canteen.%20I'm%20in%20my%20comfort%20zone%20when%20it%20comes%20to%20Malay%20food,%20at%20a%20Malay%20rice%20stall%20to%20be%20specific.%20%20It%20is%20almost%20(always)%20these%20three%20items%20-%20Potato%20Cakes%20(Begedil),%20Curry%20Vegetables%20and%20Spicy%20Tempeh.%3C/p%3E%3Cp%3EI%20have%20cooked%20Potato%20Cakes%20before,%20also%20Curry%20Vegetables.%20And%20I%20waited%20after%20so%20many%20years,%20till%20today,%20before%20attempting%20to%20cook%20Spicy%20Tempeh.%3C/p%3E%3Cp%3EAnd%20do%20you%20think%20I%20knew%20the%20good%20of%20tempeh%20then?%20NO.%20I%20could%20only%20recall%20I%20like%20the%20taste%20of%20this%20dish.%3C/p%3E%3Cp%3EThe%20Spicy%20Tempeh%20in%20the%20Malay%20rice%20stalls%20are%20usually%20cooked%20with%20diced%20green%20beans,%20if%20my%20memory%20is%20with%20me.%20I%20could%20not%20find%20any%20recipe%20on%20Spicy%20Tempeh%20with%20Green%20Beans.%20But%20thanks%20to%20Ju%20(The%20Little%20Teochew),%20I%20adapted%20her%20tempeh%20recipe%20(using%20her%20combination%20of%20red%20chili,%20shallots,%20garlic,%20soy%20sauce%20and%20sugar),%20re-created%20this%20dish%20which%20I%20enjoyed%20as%20a%20teen%20and%20now%20as%20adult,%20still%20call%20it%20Spicy%20Tempeh%20with%20Green%20Beans,%20and%20still%20enjoying%20it.%3C/p%3E%3Cp%3Eadapted%20from%20The%20Little%20Teochew%3C/p%3E%3Cp%3EIngredients:%204-5%20cloves%20garlic,%20finely%20minced;%202%20shallots,%20thinly%20sliced;%201-2%20fresh%20red%20chili,%20remove%20the%20seeds%20and%20thinly%20sliced;%20some%20soy%20sauce;%201%20pack%20of%20tempeh,%20cubed%20to%20bite%20sizes;%205-6%20green%20beans,%20blanched,%20then%20roughly%20diced;%20salt,%20and%20brown%20sugar%20to%20taste.%3C/p%3E%3Cp%3EDirections:%20Heat%20a%20little%20oil%20in%20the%20pan%20and%20fry%20to%20brown%20the%20tempeh%20(Note:%20You%20can%20also%20bake%20the%20tempeh%20in%20the%20oven,%20to%20brown%20them).%20Remove%20and%20set%20aside%20tempeh.%20Fry%20the%20garlic,%20shallots%20and%20chili%20in%20the%20remaining%20oil,%20then%20add%20soy%20sauce%20and%20continue%20frying%20till%20shallots%20are%20almost%20caramelized%20and%20are%20tender.%20Add%203-5%20tbsps%20of%20water,%20allow%20it%20to%20simmer,%20then%20some%20sugar%20to%20%20thicken%20up%20the%20sauce.%20Salt%20to%20taste%20if%20necessary.%20With%20the%20sauce%20in%20the%20pan,%20return%20the%20browned%20tempeh%20to%20the%20pan,%20also%20add%20the%20green%20beans,%20then%20continue%20frying%20till%20entire%20mixture%20(tempeh%20and%20green%20beans)%20is%20coated%20with%20the%20garlic-shallots-chili-soy%20sauce-sugar%20sauce%20concoction.%3C/p%3E%3Cp%3EI%20am%20not%20bragging%20but%20it%20does%20resemble%20the%20dish%20I%20ate%20while%20I%20was%20much%20much%20younger.%20Happy%20me!%3C/p%3E%3Cp%3EI%20am%20sharing%20this%20with%20My%20Legume%20Love%20Affair%20-%20MLLA%20hosted%20by%20Susan%20-%20The%20Well%20Seasoned%20Cook.%3C/p%3E%3Cp%3ETag:%20tempeh,%20fermented%20soy%3C/p%3E){kind=link}
