Spicy Shrimp With Jicama Salad

Ингредиенты

  • 1 lrg lemon
  • 1 tsp grnd coriander
  • 1 tsp grnd cumin
  • 3 tsp white-wine vinegar
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp sugar
  • 1 Tbsp. grnd chili pwdr (Pasilla or possibly other kind)
  • 1 Tbsp. kosher salt
  • 1 lb Jumbo prawns, shelled and deveined
  • 3 Tbsp. extra virgin olive oil
  •     Jicama Salad
  • 1/2 x jicama, peeled and sliced thin
  • 1 med papaya, peeled and sliced thin
  • 1 x cucumber, peeled, seeded and sliced thin
  • 1/4 c. fresh lime juice
  • 1 x garlic clove, chopped
  • 1/2 tsp kosher salt
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 2 Tbsp. minced fresh cilantro

  1. To make the marinade: Combine first 8 ingredients in a bowl and whisk well.
  2. Add in the prawns and set aside in the refrigerator for about 1 hour.
  3. Heat a saute/fry pan over medium high heat till the pan is warm. Add in the 3 Tbs. of extra virgin olive oil and allow which to heat up before adding the prawns. When the pan is ready, add in the prawns and saute/fry for about 30 seconds, till shrimp begin to turn opaque. Add in about 2 Tbs. of the shrimp marinade and continue to saute/fry for another 30 seconds. Serve immediately with the jicama salad.
  4. In a bowl, toss together jicama, papaya, and cucumber. Drizzle the dressing over and stir to combine. To serve, place a mound of salad on the bottom of the plate and top with shrimp.
