Chinese New Year, a celebration full of century old traditions, is a fun holiday to celebrate even if you aren't Chinese. This year is the Year of the Sheep, and the 15 day celebration begins on February 19th! I'm sharing an easy meal that will bring you and your family wealth and good fortune throughout the new year or, at the very least, a belly full of delicious tastes!
Chinese New Year is a holiday that celebrates the wish of "good fortune" in the new year with traditional appetizers and red-envelop gifts. Foods eaten during the Chinese New Year celebration often have symbolic meanings to them. Certain foods are eaten in order to bring good fortune, wealth, wisdom and peace during the new year. The color red symbolizes luck.
Ever since my kids were little, we've always enjoyed exploring cultures through their traditions, holidays and foods...Chinese New Year being no exception. I love planning a special meal around a cultural holiday. This year, my menu starts with easy and delicious appetizers from Tai Pei®. To make this meal super easy, I picked up a box of Tai Pei® Chicken Egg Rolls and a box of Tai Pei® Mini Vegetable Spring Rolls from Walmart. Spring rolls are a traditional food eaten during Chinese New Year because they are thought to bring wealth, as their shape is resembles a gold bar. They bake up crispy in the oven, are ready in minutes and are bursting with flavorful veggies! They even come with their own dipping sauce!
For the main course this year, I am serving Spicy Honey Cashew Chicken. The cashew nut symbolizes money or gold. (Do you see a pattern emerging here? haha)
This dish is so good and very easy and quick to prepare. Just make sure everything is prepped and ready to go before you start cooking because it comes together quickly! I am going to serve it over sticky rice, which symbolizes the cohesiveness of family.
Spicy Honey Cashew Chicken with Sticky Rice

Spicy sweet chicken and vegetable stir-fry meal served over sticky rice
Ingredients
- 2 cups frozen white sticky rice, prepared according to package directions
- 12 oz. skinless, boneless chicken breast, cut into 1
- 2 TBS cornstarch
- 1/2 tsp. kosher salt
- 1/2 tsp. fresh ground black pepper
- 1 TBS rice bran oil (or other none flavor oil with high smoke point)
- 1 TBS sesame oil
- 2 cups fresh broccoli florets
- 1 cup frozen shelled edamame
- 2 cloves garlic, minced
- 1 cup onion, diced
- 1 cup red bell pepper slices
- 1/2 cup roasted cashew nuts
- 1 TBS unseasoned rice vinegar
- 3 TBS honey
- 2 TBS low-sodium soy sauce
1 TBS Sriaracha (or more or less to taste)
Instructions
Combine chicken pieces, cornstarch, salt and pepper in large zipper plastic bag. Shake to coat chicken with cornstarch.
In small bowl or 1 cup glass measure, combine the rice vinegar, honey, soy sauce and Sriracha with a whisk. Set aside.
Heat large skillet, over med-high heat. Add oils. When the oils begin to shimmer, add chicken pieces in single layer and brown on all sides. (about 4 minutes) Turn heat up to high and add in all ingredients up to and including red bell pepper. Cook, stirring frequently, until vegetables are crisp tender. Stir in cashew nuts.
Add vinegar-honey mixture and toss to coat. Serve over prepared rice.
Yield: 4 servings
