- 1 pound pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 large sweet onion diced
- 1/2 red bell pepper diced
- 1/2 green bell pepper diced
- 1 teaspoon red pepper flakes (more or less to taste)
- 2-3 skinless, boneless chicken breasts cut in 1-2 inch squares
- 1/2 cup white wine
- 1/4 cup vodka (you can omit if you like)
- 1 pound cherry tomatoes (you could used diced/canned in necessary)
- 1/2 cup fresh parsley chopped fine
- kosher salt to taste
