Finally, the last bit of the last butternut squash of last season.

As much as I love butternut squash, and all winter squash, I am heartily glad to see the last of them until next fall.

One can have too much of a good thing.

Most of my squashes were enough for three or four meals, some of the bigger ones were enough for five or six. I picked 17 butternut squash, 12 spaghetti and 16 acorn squash last October.

I can’t wait to buy broccoli….. Or maybe cauliflower.

Spicy Butternut Squash Patties

Total time: 30 minutes

Ingredients:

Instructions:

In medium bowl lightly beat egg.

Add bread crumbs, spices and mix well.

Add squash and mix well.

Heat large nonstick skillet over medium heat with 1 tbs oil.

Divide squash into 4ths and spoon each 4th into pan, shaping into patty and patting down lightly.

Sauté 10 minutes, or until brown, then turn and sauté the other side 10 minutes longer.

Remove and serve.

Mon mari has been off doing other stuff lately, so I thought I’d do a dog update rather than a house update.

When they were still little puppies I did a post showing how often they slept on their backs, bellies displayed to the world.

Guapa still does.

Her favorite place to sleep is not on her bed but at the foot of the stairs, where she has to be stepped over continually.

I tried for several days to get a photo of her. Usually, if anyone gets too close she rolls over.

This day I grabbed my camera and, ignoring her completely, went upstairs and waited for her to get comfy. I admit it’s hard not to bend over and give that pretty belly a quick rub….

I quietly took a few photos but when I moved closer she woke up – and looked rather surprised.

Bonnie was sleeping like a proper dog on her bed. She almost fits.

It hasn’t been a terribly wet winter this year so they are only slightly dirty.

We all wait for spring.
