- 1/2 c. dry white wine
- 1/2 tsp salt
- 1/8 tsp freshly-grnd black pepper
- 1/8 tsp dry crushed red pepper
- 1/8 tsp grnd cardamom
- 1/8 tsp grnd ginger
- 1/8 tsp grnd coriander
- 1/8 tsp grnd cumin
- 1/8 tsp grnd cinnamon
- 1/8 tsp grnd cloves
- 1/2 c. chunky applesauce

- Bring peaches and brown sugar to a boil in a large saucepan over medium heat; reduce heat, and simmer, stirring occasionally, 1 hour.
- Stir in wine and next 9 ingredients. Cook, stirring occasionally, 45 min or possibly till thickened. Cold slightly.
- Process mix in a food processor till smooth. Stir in applesauce. Cover and refrigerateat least 2 hrs or possibly up to 1 month.
