Ok. I have a new obsession.

Have you ever heard of Blue Apron?

They are a delivery service that delivers fresh-farm ingredients right to your door. Each meal comes with a beautiful recipe card that illustrates step-by-step directions on how to prep and cook the meal so there is absolutely no guess work involved. It could not be any easier.

How it works

To get started I went to BlueApron.com and chose 3-meals for two people (they also offer family meal plans). The menus change every week so you won’t get bored of the meals. I chose the Chicken Meatballs over Creamy Polenta, Cod and Potato Brandade, and a Spiced Parsnip Soup which I am sharing here today.

I chose the day I wanted it delivered and then eagerly awaited my tasty box.

Now, I assume if you are reading you probably love for as much as I do, which means I don’t have to explain to you how exciting it is to get a box in the mail filled with all of these yummy farm-fresh ingredients. #sofun

Here is a picture to give you the visual. This is a photo from the Blue Apron website so these aren’t my ingredients but it gives you a good sense of what you get (the box, recipe cards, + ingredients).

The first recipe I decided to cook was this Spiced Parsnip Soup because I just love soup in the winter.

These are all of the ingredients needed to make the soup, which of course, were all delivered in my box. I love that you just get what you need for the recipe so you don’t end up with extra spices or produce that won’t get used.

It took me about 10 minutes to get everything prepped and ready to go, but most importantly, I already knew what I was making for dinner and I had all of the instructions right in front of me. So there was no thinking involved. Sometimes I think that ‘thinking’ about what to make or how to make it can be the hardest part of a home cooked meal. Would you agree?

Once I had everything prepped, I got cooking. The entire meal was made in one pot and came together in about 30 minutes. How delicious does this soup look?

Needless to say, I am a huge fan.

And while I do plenty of cooking in my house I really enjoyed the experience of not having to meal prep and grocery shop as a prerequisite for having a home cooked meal on the table.

Spiced Parsnip Soup

Yield: Serves 2

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients:

Directions:

Heat 1 tbsp. of olive oil in a medium pot over a medium-high heat. Add the baguette and season with salt and pepper. Cook, stirring frequently, 4 to 6 minutes, or until golden brown and crispy. Remove from the pan and set aside.

Add another 2 tsp. of olive oil to the pan and add in the parsnip, sweet potato, and onion; season with salt and pepper. Cook for about 5 minutes or until softened and browned.

Add in the tomato paste and spice blend along with a little more salt and pepper. Cook, stirring frequently, until thoroughly combined and fragrant.

Add in the collard greens, raisins, and 4 cups of water. Bring to a boil and then reduce down to a simmer, stirring occasionally, for another 10 or until heated through and slightly reduced. Add in the juice of half the lemon.

Season the yogurt with the juice of the other half of your lemon and some salt and pepper.

Ladle your soup into your favorite bowl and top with croutons and yogurt. Enjoy!
