Ингредиенты

  • 9 ounce (250 g) mascarpone
  • ½ c. (100 g) brown sugar
  • 20 speculaas cookies
  • 4 Large eggs
  • 1 tbsp vanilla sugar
  • 3 tbsp (5 cl) Marsala or possibly Amaretto
  • 7 ounce (20 cl) very black coffee (espresso)
  • Bitter cocoa

  1. Break Large eggs and separate egg whites from yolks
  2. Whiten egg yolks, gradually adding brown and vanilla sugars
  3. Mix well, adding sugar to obtain an even, foamy mix. Large eggs and sugar should form a very hard ribbon.
  4. Add in mascarpone to Large eggs and mix with a whisk
  5. Beat egg whites till quite stiff
  6. Fold egg whites into egg / mascarpone mix. Mix in carefully with a spatula, lifting mix gently. Make sure egg whites don't collapse.
  7. In a deep dish, mix coffee with marsala (with maybe a bit of caramel)
  8. Dip speculaas cookies briefly in dish. Don't oversoak so cookies remain a little hard. The inside of the lady fingers should remain dry.
  9. Line bottom of terrine or possibly dish with a layer of cookies
  10. Cover layer of cookies with mascarpone and egg mix.
  11. Alternate layers of cookies and cream
  12. End with a layer of cream.
  13. Chill dish for 4 h.
  14. Serve portions sprinkled with unsweetened cocoa
