Sparkling Strawberry Sorbet
Sometimes a girl just needs something quick. The phrase I might often use is ‘quick and dirty’ but nothing dirty about these. White sparkling wine with a strawberry sorbet. One of my favorite things. The sorbet is easy and an even be done without an ice cream maker but if you’re not in the mood? REALLY quick and dirty is buying some sorbet and sherbet and using it instead. I’ve done it. Not as good as this but it will do in a pinch.
Still my day was just nuts…phone ringing off the hook, doorbell ringing in the middle of my first attempt to shoot. Just one of those days. But I did have some pluses; one ring of the doorbell was a delivery of a brand new car that’s been loaned to me to drive during Denver Restaurant Week. Just for grins. A brand new Toyota Avalon. How will I manage? I’m used to my much older Explorer; I should probably do some practice driving around the hood to make sure I know how it all works…cars have push buttons for ignition today? Whoa!
Then the service guys showed up for an issue with my house that I’ve not mentioned but that needs to be addressed. The builder, in all of his/her/their wisdom did not stop to think that MAYBE it would not be a good idea to put the air conditioner of the house just finished next door right outside my bedroom window. While the owners are softly sleeping on the 2nd floor of their home, the noise of that unit wakes me constantly because I have a ranch and my bedroom is on ground level. It is SO loud. They’ve ignored me for weeks and it’s sad it has to come to this but I’ll call every agency in the book until I find someone who gets that I should actually be able to sleep in my bedroom without the sound of a small car gunning it’s engine all night long. Right? Still; up at 4am again today and it’s not a pleasant getting up; it’s a stressful reaction to that sound. Every single night. I’ve been sleeping in the family room when I get so tired I can’t take it and today? I’m done. I will not quit until someone GETS it that this should never have happened and they need to fix it. Period. So I’m tired and a bit grumpy.
These cocktails were fun to drink but as happens with a sparkling wine; they needed some assistance when photographed. As in I had to sip out some of what I poured for each shot. A sip here and a sip there and whoa, I could take a nap now. Like right now on my keyboard. So I’ll make this short and sweet…that’s exactly what there are. Short. Sweet, Easy. The dryness of the wine actually keeps them from being cloying at all and the combination of the two makes them very easy to drink. From my own experience right now? Maybe too easy?
Mix up the sorbet with any number of fruits…blueberries, peaches, raspberries, you name it. Add some simple syrup to taste and a bit of lemon and you’re almost there. You can freeze it using an ice cream maker or even just in a pan; or as I mentioned even from the store. It’s the combination of the two that makes it so very delightful. Really. Now where’s my drink?!!
White Wine and Strawberry Slushies
Ingredients
- For the Strawberry Sorbet:
- 3 cups strawberries, hulls removed
- 4-6 oz simple syrup to taste
- 2 Tbsp Lemon Juice
- 2 Tbsp Limoncello (optional)
- To Make the Cocktail:
- 1 750 ml bottle Moscato or Prosecco or even Pinot Grigio, chilled
Preparation
Purée strawberries, simple syrup, Limoncello and lemon juice in a blender until smooth. Chill for 30 minutes. Process in an ice cream maker according to manufacturer’s instructions and then chill for at least a half hour in the freezer.
Spoon 2 scoops into champagne or rocks glasses and top with chilled Prosecco. Garnish with a strawberry and serve immediately with straws. Freeze any remaining sorbet.
