Ever been to a mega produce market? We have all visited our local Farmer’s Market’s and I adore rare finds, like the Lemon Basil plant that I bought last summer. This year, I finally made it out to the Berkeley Bowl, also known as a mega produce store, where you will discover more than that rare Farmer’s market find.
I was intrigued when I noticed a display of pink lemons. Well, actually Jen and I were and we both grabbed a half-dozen or so of them. Oh how I wish I bought more. Pink Lemons are definitely a rare breed. Propagated from the Eureka Lemon, it is known as the Variegated Pink Lemon. Such a fun and unusual variety, yet it still produces a pale yellow juice. Nope, to make it pink you need a few blueberries or blackberries.
I urge you to make lemonade out of lemons. Don’t wait for a bad day. It’s so refreshingly delicious and it puts a smile on your face whether you need one or not.
I personally like enjoying this refreshing drink any time of the day, but after a long hot day at work it’s the bomb.

3 ounces of Simple Syrup (1/4 cup hot water and ¼ cup sugar) (I used SugarLeaf) ½ cup loosely packed mint leafs 2 cups cold water 20 ounces sparkling water (I used Perrier) ½ cup lemon juice (about 3 and ½ lemons) 2 blackberries or blueberries ice
Combine the mint leaves and simple syrup. Using a muddler or wooden spoon, gently muddle the mint leaves, being careful not to tear them. Stir in the lemon juice and cold water. Add the sparkling water. muddle the blueberries or blackberries. Strain into the Lemonade (to turn it pink) Garnish with lemon 3.3.3077
