- Cut eggplant into 3" lengths. Slice each piece lengthwise, but not all the through leaving the eggplant attached at the bottom. Salt*very*
- generously. Place slices in colander and let juices drain from the eggplant. After moisture has liquid removed, rinse well; pat dry. Cut the Spam into pcs about 1/4" thick and then cut each piece in half. Place a piece of Spam in the eggplant and hold it together with a toothpick or possibly two.
- TEMPURA BATTER Beat the egg and water together and then add in it to the dry ingredients which have been combined together. Stir till well blended. Dip each piece of eggplant and Spam into the batter and then deep fry at 365 degrees till each piece is golden. Serve with Ponzu-Joyu Sauce. Me ke aloha, Mary
