%20assuming%20the%20whole%20squash%20is%206-7%20cups%20of%20squash.%3C/p%3E%3Cp%3EI%20prefer%20full-fat%20dairy%20(for%20a%20number%20of%20reasons)%20so%20that%E2%80%99s%20a%20bit%20heavier%20in%20calories,%20but%20still%20pretty%20good%20for%20how%20filling%20it%20is.%20It%20also%20works%20great%20with%20goat%20butter%20and%20Pecorino%20Romano!%3C/p%3E%3Cp%3EThe%20calories%20aren%E2%80%99t%20my%20only%20issue%20with%20traditional%20fettuccine%20alfredo.%20After%20indulging%20in%20some%20alfredo,%20I%20usually%20fall%20into%20a%20carb%20coma%20and%20am%20useless%20for%20the%20rest%20of%20the%20day.%3C/p%3E%3Cp%3EI%E2%80%99m%20not%20sure%20if%20this%20recipe%20qualifies%20as%20keto%20or%20low-carb,%20but%20it%E2%80%99s%20definitely%20WAY%20lower%20in%20carbs%20than%20the%20regular%20pasta%20version.%3C/p%3E%3Cp%3EOf%20course,%20if%20your%20squash%20is%20smaller%20than%20mine%20was,%20you%20may%20not%20need%20all%20the%20sauce%20(save%20any%20extra%20for%20a%20small%20portion%20of%20pasta,%20or%20maybe%20even%20pizza%20night!).%20It%E2%80%99s%20not%20the%20lowest%20in%20sodium,%20but%20if%20the%20rest%20of%20your%20meals%20are%20home-cooked%20and%20fairly%20low%20in%20sodium%20it%E2%80%99s%20not%20such%20a%20big%20deal.%20This%20is%20definitely%20one%20treat%20you%20can%20enjoy%20guilt-free!%3C/p%3E%3Cp%3EIf%20you%20microwave%20your%20squash%20(here%E2%80%99s%20how)%20to%20avoid%20the%20baking%20time%20this%20is%20actually%20a%20really%20fast%20dinner%20to%20make!%20The%20sauce%20comes%20together%20in%20just%20a%20few%20minutes.%3C/p%3E%3Cp%3ETo%20make%20this%20spaghetti%20squash%20alfredo%20gluten-free%20or%20grain-free,%20you%20can%20use%20cassava%20flour.%20Every%20brand%20works%20a%20bit%20differently%20(unlike%20wheat%20flour),%20so%20I%20can%20only%20guarantee%20that%20this%20works%20with%20Bob%E2%80%99s%20Red%20Mill%E2%80%99s%20cassava%20flour.%3C/p%3E%3Cp%3EAlso%20note%20that%20you%20need%20a%20little%20less%20cassava%20than%20you%20do%20wheat%20flour!%20The%20roux%20will%20be%20quite%20crumbly%20but%20the%20sauce%20still%20comes%20together%20great.%3C/p%3E%3Cp%3EI%20sprinkle%20the%20top%20of%20my%20spaghetti%20squash%20boats%20with%20a%20little%20extra%20Parmesan%20or%20even%20a%20little%20mozzarella%20and%20broil%20them%20for%20a%20few%20minutes,%20but%20you%20really%20don%E2%80%99t%20need%20to%20if%20you%20need%20the%20extra%20time.%20%20Mix%20in%20the%20sauce%20and%20you%E2%80%99re%20good%20to%20go!%3C/p%3E%3Cp%3ETo%20make%20things%20even%20simpler,%20you%20can%20skip%20serving%20them%20in%20their%20%E2%80%9Cshells%E2%80%9D%20and%20just%20scrape%20the%20squash%20out%20into%20your%20pot%20of%20sauce%20(just%20make%20sure%20it%E2%80%99s%20big%20enough),%20stir,%20and%20serve.%3C/p%3E%3Cp%3EI%20sometimes%20enjoy%20mine%20with%20a%20sprinkle%20of%20parsley,%20red%20pepper%20flakes,%20a%20Caesar%20salad%20on%20the%20side%20or%20maybe%20even%20some%20roasted%20broccoli%20with%20lemon,%20garlic%20and%20Parmesan%20cheese%20would%20be%20awesome%20with%20this,%20too.%3C/p%3E%3Cp%3ESome%20add%20ham%20chunks%20is%20also%20a%20delicious%20addition!%20No%20matter%20how%20you%20serve%20it,%20I%20hope%20you%20love%20it%20as%20much%20as%20we%20do.%20%F0%9F%99%82%3C/p%3E%3Cp%3EAnd%20if%20you%E2%80%99d%20like%20to%20try%20another%20cheesy%20squash%20dish,%20try%20my%20pumpkin%20macaroni%20and%20cheese!%3C/p%3E%3Cp%3EBy%20the%20way,%20I%20used%20a%20stripetti%20squash.%20It%20was%20actually%20labeled%20as%20spaghetti%20squash%20so%20I%20thought%20it%20was%E2%80%A6%20a%20spaghetti%20squash.%20%F0%9F%98%89%20Spaghetti%20squash%20hasn%E2%80%99t%20made%20its%20way%20to%20Germany%20yet%20and%20I%20was%20super,%20super%20lucky%20to%20find%20the%20one%20I%20did.%3C/p%3E%3Cp%3EServings:%202%20very%20large%20servings%20or%204%20as%20a%20side%3C/p%3E%3Cp%3ECalories:%20428%20kcal%3C/p%3E%3Cp%3E1%3C/p%3E%3Cp%3EFirst%20prep%20the%20spaghetti%20squash.%20Preheat%20the%20oven%20to%20350%20%C2%B0F%20(175%20%C2%B0C).%20Cut%20the%20spaghetti%20squash%20in%20half%20using%20a%20large%20sharp%20knife,%20scoop%20out%20the%20seeds,%20and%20brush%20a%20little%20olive%20oil%20on%20the%20inside%20of%20each%20piece.%20Place%20the%20cut%20side%20down%20on%20a%20baking%20sheet.%3C/p%3E%3Cp%3EBake%20until%20tender,%20about%20an%20hour.%20Alternatively,%20keep%20the%20spaghetti%20squash%20whole.%20Poke%20a%20few%20holes%20deep%20into%20the%20squash%20with%20a%20large%20knife.%20Place%20in%20the%20oven%20whole.%20Bake%20for%2060%20minutes,%20remove%20from%20the%20oven%20and%20let%20rest%20for%2010%20to%2020%20minutes%20before%20slicing%20in%20half%20with%20a%20large%20serrated%20knife%20like%20a%20bread%20knife.%3C/p%3E%3Cp%3EScoop%20out%20the%20seedy%20inside%20leaving%20the%20spaghetti%20strands.%20Once%20cooked,%20use%20a%20fork%20to%20gently%20scrape%20the%20%22spaghetti%22%20strands%20into%20the%20center.%3C/p%3E%3Cp%3EFor%20the%20sauce,%20melt%20the%20butter%20in%20a%20small%20pot.%20Once%20hot%20add%20the%20garlic%20and%20saute%20for%201-2%20minutes%20over%20medium-low%20heat.%20Add%20the%20flour%20and%20whisk%20into%20the%20butter%20(f%20using%20cassava,%20it%20may%20look%20crumbly).%20Cook%20for%20another%20minute%20while%20stirring.%20Add%20the%20cream%20cheese%20and%20stir%20it%20into%20the%20butter%20mixture.%3C/p%3E%3Cp%3EAdd%20the%20milk%20and%20whisk%20well.%20Bring%20up%20to%20a%20gentle%20simmer%20then%20remove%20from%20the%20heat.%20Add%20the%20freshly%20grated%20cheese%20and%20salt%20and%20stir%20until%20melted,%20just%20a%20minute%20or%20two.%20Pour%20half%20the%20sauce%20into%20each%20spaghetti%20squash%20half%20(or%20less%20if%20using%20a%20smaller%20squash).%20Gently%20stir%20to%20combine.%20Top%20with%20an%20extra%20sprinkle%20of%20Parmesan%20and%20place%20under%20the%20broiler%20of%20your%20oven%20for%202-3%20minutes%20until%20golden%20and%20bubbly.%20Serve%20immediately.%3C/p%3E%3Cp%3EIf%20you're%20not%20using%20a%20freshly%20grated%20Parmesan%20and%20use%20an%20already%20shredded%20Parmesan%20instead,%20the%20volume%20will%20be%20different.%20I%20find%20it%20best%20to%20always%20use%20the%20weight%20measurement.%20In%20my%20experience%20though,%20freshly%20grated%20Parmesan%20will%20be%20roughly%201%20cup%20since%20it's%20so%20fluffy,%20whereas%20already%20shredded%20Parmesan%20cheese%20will%20only%20be%20about%201/2%20cup%20in%20volume%20for%20the%20same%20weight.%3C/p%3E%3Cp%3EPictures%20on%20this%20post%20were%20updated%20September%202019.%20%20This%20is%20what%20they%20looked%20like%20before:%3C/p%3E%3Cp%3Ebutter,%3C/p%3E%3Cp%3Ecream%20cheese,%3C/p%3E%3Cp%3Egarlic,%3C/p%3E%3Cp%3Emilk,%3C/p%3E%3Cp%3Eparmesan%20cheese,%3C/p%3E%3Cp%3Espaghetti%20squash%3C/p%3E){kind=link}
