- Cook the spaghetti according the packet instructions.
- Meanwhile, in a large pan heat the olive oil and add finely chopped garlic. Sauté for about a minute(low to medium heat). Keep an eye on the garlic as it can burn very easily.
- Add finely chopped fresh flat leaf parsley & chopped chilli and sauté for another minute or so. (Note: add only as much chilli as you can eat. There is nothing worse than a delicious dish that cannot be consumed for its extremely high amount of chillies put in. The hotness of each chilli pepper is different so I suggest use the ones you are familiar with or start with really mild ones)
- Pour a few spoons of the spaghetti water in the pan and cook for another minute.
- Drain the spaghetti, and add them to the pan. Mix them well with the olive oil, parsley, garlic and chilli.
- Transfer to plates & serve with Parmesan cheese.
