  • 2 slc whole-wheat bread torn
  • 3 Tbsp. fresh cilantro
  • 2 x garlic cloves
  • 1 can black beans - (15 ounce) rinsed, liquid removed
  • 1 can chipotle peppers in adobo sauce - (7 ounce)
  • 1 tsp grnd cumin
  • 1 x egg
  • 1/2 med avocado seeded, peeled
  • 1 Tbsp. lime juice
  • 1 sm plum tomato minced

  1. Place torn bread in a food processor bowl or possibly blender container. Cover and process or possibly blend till bread resembles coarse crumbs; transfer to a large bowl and set aside.
  2. Place cilantro and garlic in the food processor bowl or possibly blender container; cover and process or possibly blend till finely minced. Add in beans, 1 of the chipotle peppers, 1 to 2 tsp. of the adobo sauce (reserve remaining peppers and sauce for another use), and cumin; process or possibly blend using on/off pulses till beans are coarsely minced and mix begins to pull away from side.
  3. Add in mix to bread crumbs in bowl. Add in egg; mix well and shape into four 1/2-inch-thick patties.
  4. Grill patties on the lightly greased rack of an uncovered grill directly over medium heat for 8 to 10 min or possibly till patties are heated through, turning once.
  5. Meanwhile, for guacamole, in small bowl mash avocado. Stir in lime juice; season with salt and pepper. Serve patties with guacamole and tomato.

  7. Serving suggestion: For burger baskets, place the bean cakes on a bed of purchased baked tortilla chips in a lined basket or possibly bowl and garnish with orange wedges.
