Southwest Style Spinach Zucchini Skillet Recipe

I love this - especially this time of year.

To avoid a trip to the store for spinach, I substituted frozen kale I had on hand, and it worked fine. I am always interested in a twist on ways to use zucchini, and am glad I tried this one.
