I’ve been making a conscious effort to work in more meatless meals and upping the veggies lately and bean burgers are one of my go to healthy dishes. These Southwest Bean Burgers provide a ton of healthy protein, fiber and not to mention they have incredible flavor! Packed with black and pinto beans, corn, green chilies and the perfect combination of spices. Topped off with some white cheddar and salsa and you’ve got yourself a fiesta in your mouth!

Bean burgers are really easy to make and honestly they are so much better then anything in the freezer aisle and so much cheaper when you make them yourself. Not only is the taste better, saves you some cash but you get to control the quality of the ingredients, but you get to have fun and experiment with flavor combos! Keeping things light on a hot summer day, I served a simple tomato and cucumber salad on the side.

Add the beans, garlic cloves, bell pepper and vegetable broth to a food processor. Pulse until relatively smooth.

In a bowl mix together the bean puree, green chilies, corn, spices and garbanzo bean flour. Stir until combined evenly.

I use a large cookie/muffin scoop to keep everything even. Scoop the mixture onto a parchment lined baking sheet.

Press down slightly to form patty. Pop in the fridge for 15-30 minutes to make the patties easier to handle.

I used a griddle to cook these on but you could use a large skillet. Non stick over medium high heat with just a spritz of non stick spray.

Cook for about 5 minutes per side until golden. You get a nice crust on the outside and a creamy inside.

After cooking on the griddle I popped the burgers back onto the baking dish, topped with some white cheddar and into a 375 degree oven for 4-5 minutes until the cheese is melted.

Finish off with store bought or homemade salsa.
