%20county%20courthouse,%20the%20oldest%20existing%20courthouse%20in%20the%20State%20of%20Georgia.%20%20It%20was%20made%20with%20local%20brick%20containing%20trace%20amounts%20of%20gold.%20%20It%E2%80%99s%20one%20of%20the%20most%20visited%20historic%20sites%20in%20the%20State.%3C/p%3E%3Cp%3EWe%20stopped%20in%20the%20Dahlonega%20General%20Store.%20%20They%20had%20a%20bucket%20of%20coonskin%20hats%20and%20I%20really%20wanted%20to%20get%20one%20for%20our%203%20year%20old.%20%20As%20you%20can%20see,%20he%20wasn%E2%80%99t%20having%20it.%20%20It%20stayed%20on%20all%20of%20about%202%20seconds.%3C/p%3E%3Cp%3EWhat%20did%20however%20interest%20him%20were%20these:%3C/p%3E%3Cp%3EWe%20went%20ahead%20and%20bought%20him%20one%E2%80%A6but%20he%20won%E2%80%99t%20be%20getting%20it%20until%20he%E2%80%99s%20at%20least%20five,%20er%20six%E2%80%A6maybe%20seven%E2%80%A622?%3C/p%3E%3Cp%3EFortunately%20we%20were%20able%20to%20redirect%20his%20interest%20to%20these%20and%20he%20left%20the%20store%20a%20happy%20little%20boy%20with%20a%20big%20bag%20full%20of%20them:%3C/p%3E%3Cp%3EOne%20of%20the%20reasons%20we%20visited%20Dahlonega%20was%20to%20eat%20at%20the%20Smith%20House.%20%20And%20that%E2%80%99s%20where%20we%20headed%20next%20to%20enjoy%20some%20traditional%20Southern%20fare.%3C/p%3E%3Cp%3EThe%20food%20was%20served%20%E2%80%9Cfamily%20style%E2%80%9D%20as%20is%20the%20custom%20at%20the%20Smith%20House.%20%20They%20bring%20the%20food%20out,%20including%20bowls%20of%20practically%20every%20kind%20of%20traditional%20Southern%20side%20you%20can%20think%20of,%20and%20on%20busy%20days%20you%20share%20the%20table%20with%20strangers%20and%20pass%20the%20food%20around%20%E2%80%93%20like%20one%20big%20happy%20family.%3C/p%3E%3Cp%3EThe%20food%20tasted%20great.%20%20Everything%20had%20a%20lot%20of%20flavor.%20%20Even%20the%20collard%20greens%20tasted%20good%20%E2%80%93%20and%20it%20quickly%20became%20apparent%20why.%20%20Everything%20had%20one%20ingredient%20in%20common:%20%20Bacon%20grease!%20%20Everything%20from%20the%20creamed%20corn%20to%20the%20collard%20greens%20to%20the%20black-eyed%20peas%20was%20cooked%20with%20bacon%20grease%20and%20boy%20oh%20boy%20was%20it%20ever%20good!%20%20(The%20creamed%20corn%20was%20to%20die%20for.%20%20I%20could%20have%20eaten%20the%20entire%20bowl%20myself%20and%20then%20asked%20for%20seconds).%20%20Yes,%20the%20Southerners%20really%20have%20discovered%20the%20secret%20to%20making%20food%20taste%20great!%3C/p%3E%3Cp%3EIt%20was%20a%20nice%20experience%20and%20we%E2%80%99ll%20definitely%20be%20paying%20the%20Smith%20House%20another%20visit%20the%20next%20time%20we%20go%20to%20Georgia.%3C/p%3E%3Cp%3ESo%20today%20we%E2%80%99re%20having%20some%20green%20beans%20made%20Southern%20style:%20%20Let%E2%80%99s%20hear%20it%20for%20BACON!%3C/p%3E%3Cp%3EAnd%20let%E2%80%99s%20get%20started!%3C/p%3E%3Cp%3EYou%E2%80%99ll%20need%20about%20a%20pound%20of%20fresh%20green%20beans%20for%20four%20people.%20%20Bring%20a%20pot%20of%20water%20to%20a%20boil%20and%20boil%20the%20beans%20for%205%20minutes.%20%20Immediately%20drain%20the%20beans%20and%20dump%20them%20into%20a%20bowl%20of%20ice%20water.%20%20Let%20them%20sit%20for%20a%20minute%20or%20two%20and%20then%20thoroughly%20drain%20and%20pat%20dry.%20This%20will%20keep%20them%20from%20continuing%20to%20cook%20and%20will%20give%20you%20that%20nice%20semi-crunchy%20end%20result.%3C/p%3E%3Cp%3EDice%20the%20bacon.%20%20Tip:%20%20Frozen%20bacon%20is%20much,%20much%20easier%20to%20dice.%3C/p%3E%3Cp%3EFry%20the%20bacon%20until%20crispy.%20%20Transfer%20to%20a%20plate.%3C/p%3E%3Cp%3EMelt%20the%20butter%20in%20the%20skillet%20along%20with%20the%20remaining%20bacon%20grease%20and%20fry%20the%20onions%20until%20they%20begin%20to%20caramelize,%20about%207-8%20minutes.%20%20Add%20the%20garlic%20and%20cook%20for%20another%20minute.%3C/p%3E%3Cp%3EAdd%20the%20green%20beans%20along%20with%20the%20salt%20and%20pepper%20and%20fry%20for%20about%205%20minutes.%20%20You%20want%20them%20crispy%20but%20not%20crunchy%20hard.%3C/p%3E%3Cp%3EReturn%20the%20bacon%20to%20the%20skillet.%3C/p%3E%3Cp%3EStir%20to%20combine.%20%20Add%20salt%20and%20pepper%20to%20taste.%20%20Serve%20immediately.%3C/p%3E%3Cp%3ESay%20it%20with%20me:%20%20%E2%80%9CBecause%20everything%20is%20better%20with%20bacon.%E2%80%9D%3C/p%3E%3Cp%3ESouthern-style%20Green%20Beans%20with%20Caramelized%20Onions%20and%20Bacon%3C/p%3E%3Cp%3E:%20The%20Daring%20Gourmet,%20www.daringgourmet.com%3C/p%3E%3Cp%3EServes:%204%3C/p%3E%3Cp%3EBring%20a%20pot%20of%20water%20to%20a%20boil%20and%20blanch%20the%20green%20beans%20for%205%20minutes.%20Immediately%20drain%20and%20dump%20them%20into%20a%20large%20bowl%20of%20ice%20water%20to%20cool%20for%20a%20couple%20of%20minutes.%20Drain%20and%20pat%20dry.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet%20over%20medium-high%20heat,%20fry%20the%20bacon%20until%20crispy.%20Transfer%20to%20a%20plate.%3C/p%3E%3Cp%3EMelt%20the%20butter%20in%20the%20skillet%20with%20the%20remaining%20bacon%20grease%20and%20cook%20the%20onions%20unt
