- 1 pint grape tomatoes or about 2 cups
- 1 pear tomato
- 1 regular tomato
- 1 medium cucumber
- 1 onion (I used sweet Vidalia)
- 3 to 4 cups chopped watermelon
- 1 fresh lemon or about 3 tablespoons
- olive oil
- 1/2 teaspoon dried basil">basil or fresh basil">basil leaves
- salt
- black pepper
- Fresh mint leaves, Optional (I chopped about 3 or 4 and added to salad)
- Roasted Brussels Sprouts with Bacon and Walnuts
- Grocery List:
- 1 to 1 1/2 pounds fresh Brussels sprouts (could use frozen)
- 4 slices bacon
- 3 or 4 green onions
- 1 small sweet red pepper
- olive oil
- sea salt
- black pepper
- 1 cup walnuts, chopped (could use pecans)
- 1/2 cup craisins or could use raisins
- 2 tablespoons roasted sunflower seeds (Optional)
- grated parmesan cheese (Optional)
- Make your meal complete with this dessert!
- Fresh Peach Puddin
- Grocery List:
- 3 cups peeled peaches cut in chunks
- 1 cup sugar
- salt
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup evaporated milk (could use regular milk)
- 1/4 cup or 4 tablespoons butter or margarine, melted
