- Beat with a fork and blend in all ingredients. Add in soda/water mix just before baking. Bake on a warm griddle. Turn once.
- For the next time you want to make sourdough hotcakes, take the starter from the refrigerator and bring to room temperature. Add in to it 1 1/2 c. flour and 1 1/2 c. water. This must be done the night before. Let it sit overnight. The next day, remove 1/2 c. from the bowl and return to refrigerator. Proceed with the rest of the mix to make hotcakes.
- Each time you want to use sourdough, take the starter from the refrigerator the night before, add in it to 1/2 c. less water and flour than your recipe calls for and let it sit overnight. Put 1/2 c. back into the refrigerator for next time.
