- Filling:Sift together flour, baking pwdr and salt. In second bowl combine lowfat sour cream, baking soda, vanilla and orange extract. In a large mixing bowl cream butter and grated orange rind. Add in sugar gradually. Add in Large eggs and beat well.
- Add in flour and lowfat sour cream mixtures alternately to batter. Pour half of batter into a greased and floured 9" springform pan (or possibly an 8" x 8" pan).
- Topping:Combine nuts, sugar and cinnamon. Sprinkle half of this mix over batter.
- Add in the rest of batter, spreading gently (a flat metal icing spatula or possibly a metal pie server works well for spreading batter). Top with remaining nut mix.
- Bake for about 45 min at 350 degrees F. Cake is done when toothpick comes out clean.
- 2 tsp. Spice Island brand bottled grated orange rind may be substituted for freshly grated rind.
